The Easter bank holiday will be here before you know it and these super cute little cherry & coconut cupcakes with bunny tops are so easy to make.
You'll need for the cake mix:
195g self raising flour
120g butter
80g desiccated coconut
3 eggs
100g roughly chopped glace cherries
50ml milk
130g caster sugar
1 tsp vanilla extract
1 tsp baking powder
I love the colour and size of these cupcake cases, perfect for Easter!
1. Pre-heat the oven to 180c/gas 4
2. Line a muffin tin with 12 cupcake cases
3. Cream the butter and sugar together until it's pale and fluffy then add the eggs one at a time, the texture looks quite like porridge at this point . . .
4. Add the coconut and sieve in the salt, baking powder and flour. Mix it up well and add the milk.
5. Fold in the chopped cherry pieces then divide the mix between the cases. I always lightly push a cherry into the top of each cupcake before I pop it into the oven. Finding a whole cherry in your cupcake is always a treat!
6. Bake for approximately 20 minutes until they are golden and leave to cool on a wire rack.
Whilst the cakes are cooling prepare the super cute bunny ears.
Cut a large marshmallow in half and dip into light pink cupcake sprinkles.
Once the cupcakes have cooled, pipe on the white icing. I used a pre-made one from Asda.
Start from the outside and spiral the cupcake round in a circular motion until you've reached the centre.
I used little strawberry flavoured cupcake sprinkle for a nose and then piped on the face with a small black icing pen, you can usually get the smaller icing pens in packs of 4 (similar here).
Once they are finished, put the kettle on and enjoy with a cuppa . . . or a glass of prosecco over the bank holiday easter weekend!
